Breakfast : Avocados and Smoked Salmon

Breakfast is by far the most important meal of the day. A big healthy breakfast is key to setting you up for the day ahead and largely impacts your mood, hunger and energy levels throughout the day. Aside from my fave cereal (coco pops), I like to switch it up a little and go for a healthy filling breakfast and now that I’m going on a bit of a health kick, I’ve turned my attention to some alternative breakfast options. This is one of my favourites.

You will need:

  • 1 Bagel
  • Philadelphia cream cheese
  • 1 Avocado
  • Smoked Salmon
  • 1 egg

This is such a simple and rather quick breakfast recipe. All you need to do is toast the bagel, cut it into two halves and spread some philly on both. For the first bagel, fry an egg and lay that on the bagel and top that off with a piece of smoked salmon. For the second, spread half an avocado around the bagel. It really is that simple.

Although there are carb/ fat components to this breakfast, i.e. the bagel and cream cheese, it is also quite well balanced with the protein and nutrients.

Avocados are a great superfood. It is packed with nutrients much as Potassium, Vitamin E and K and B5 as well as proteins and healthy fats. Smoked salmon is a great brain food, and also contains protein predominantly and other vitamins such as D and B-complex. Too much smoked salmon however can have a negative effect due to the significant amount of sodium. Egg is rich in protein, and when frying I either use 1 cal spray oil or no oil at all to fry it (it’s all about the non-stick frying pan!). You need a certain amount of fats and carbs to get your energy levels high in the morning, so in comes the bagel and philly!
